This is a different, sweet salsa that is perfect for summer and receives rave reviews! It stars sweet white corn and black beans, with red onion, red pepper, sugar, and the crisp tang of rice wine vinegar. Serve with chips.
Ingredients

- 0.5 reds onion , chopped
- 1 red pepper , chopped
- 0.5 cups sugar
- 0.5 cups rice wine vinegar
- 1 pinch salt to taste

In a large bowl, stir together corn, beans, onion, red pepper, and sugar. Stir in rice wine vinegar, and season with salt.

Chocolate "I Scream" Cookie Sandwiches
I used chocolate to make a screaming ghost face design on these Halloween-themed ice cream cookie sandwiches, just so I could do a play on words.
Oatmeal Energy Balls
I am a vegetarian and love to eat these oatmeal energy balls before I go to the gym. Sometimes I like to add extra whole peanuts to the recipe. Substitute ΒΌ cup dark chocolate chips for the raisins if desired. If you want to eat them on the go, wrap them in waxed paper and tie with a bread tie. Enjoy!
Patty's Tofu Burgers
This is a special recipe for me. My first veggie burger from scratch! It is low cal, great tasting and easy. I make a bowl of this mix and leave it in the fridge so my husband can pat out a burger and quickly cook it on his lunch break. Enjoy:)
