A great granola recipe that's a perfect addition to cereal, yogurt, fruit or even just to enjoy plain.
Ingredients
- 0.75 cups brown sugar
- 0.25 cups water
- 3 cups rolled oats
- 0.5 teaspoons salt
- 1 cup chopped walnuts
- 2 teaspoons ground cinnamon
- 1 tablespoon honey
- 2 teaspoons vanilla extract
Instructions
-
1
Preheat an oven to 275 degrees F (135 degrees C). Cover a 10x15 inch pan with wax paper.
-
2
Mix brown sugar and water in a microwave safe bowl. Cook in microwave to dissolve the sugar, about 1 minute. Combine oats, salt, walnuts, and cinnamon in a large bowl. Stir in sugar mixture, honey, and vanilla extract. Mix well. Pour mixture onto the prepared pan, spreading evenly. Create clusters by squeezing small handfuls of the oat mixture together.
-
3
Bake in the preheated oven for 20 minutes. Remove from oven and gently stir granola using a spoon. Return to the oven and bake for an additional 25 minutes. The granola will be slightly browned and will continue to harden as they cool.

Easy Grain-Free Almond Flour Brownies
I love a one-dish baking recipe because it cuts down on mess and clean-up! Unlike some gluten-free or grain-free baked goods, these almond flour brownies have a pleasant texture. Experiment by adding your choice of nuts, flavored chocolate chips, and different flavor extracts. Top with icing if you wish. At Christmas, adding crushed candy canes and 1 1/2 teaspoons mint extract makes for a nice holiday treat.
Seven-Minute Frosting
My mother used to make this seven-minute frosting without cream of tartar as a base before making her marshmallow frosting on some of her cakes. This makes enough to fill and frost an 8- or 9-inch cake with two layers.
Mexican Pickled Jalapenos
These taqueria-style pickled jalapenos are a great way to preserve jalapenos from your garden. This recipe is suitable for canning but make sure that the vinegar you use has 5% acidity. The pickled jalapenos go great with any Mexican dish.
