My husband asked if I could make a sweet pumpkin seed batch from all the pumpkin seeds we got from carving jack-o'-lanterns.
Ingredients
- 2 cups raw whole pumpkin seeds
- 2 tablespoons butter , melted
- 8 tablespoons white sugar , divided
- 3 teaspoons ground cinnamon , divided
Instructions
-
1
Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
-
2
Remove pulp and strings from pumpkin seeds. Wash and thoroughly dry seeds.
-
3
Place melted butter in a large bowl. Add seeds and toss until evenly coated. Pour seeds onto the prepared baking sheet. Sprinkle with 2 tablespoons sugar and 1 teaspoon cinnamon; stir to coat, then spread into a single layer.
-
4
Bake in the preheated oven for 5 minutes.
-
5
Remove from the oven and sprinkle seeds with another coating of 2 tablespoons sugar and 1 teaspoon cinnamon, stirring and spreading as before. Bake for 5 minutes. Repeat the coating and spreading step one more time and bake for 5 more minutes.
-
6
Remove from the oven and sprinkle seeds with remaining 2 tablespoons sugar; stir and spread into a single layer.
-
7
Bake until sugar is coated onto seeds, about 10 more minutes. Let seeds cool on the baking sheet before eating.

Chicken Parmesan Pasta Casserole
This chicken Parmesan pasta bake is perfect for potluck meals, family gatherings, or in a smaller batch as comfort food for the family. It's my take on traditional chicken Parmesan. I came up with this for my wife's corporate potluck lunch. She wanted chicken Parmesan but it was too difficult to feed 20 people the conventional way. I figured a casserole would work just as well. It did!
Caramel Corn I
This caramel corn is great for Monday night football. The assortment of nuts makes it deluxe caramel corn. It takes a bit of time, but is more than worth it.
