Tamagoyaki (Japanese Rolled Omelette)
It's easy to make Japanese-style food at home with this classic Japanese rolled omelette recipe. Tamagoyaki is slightly sweet, and seasoned with soy sauce, mirin, and dashi. It's a favorite in bento boxes and makes a tasty appetizer. Serve with shredded daikon and soy sauce for dipping.
Ingredients
- 4 large eggs
- 4 tablespoons prepared dashi stock
- 1 tablespoon white sugar
- 1 teaspoon mirin , Japanese sweet wine
- 0.5 teaspoons soy sauce
- 0.5 tablespoons vegetable oil
Instructions
-
1
Whisk eggs, dashi stock, sugar, mirin, and soy sauce together in a bowl.
-
2
Heat 1/3 of the oil in a large nonstick skillet over medium-high heat. Add about 1/3 of egg mixture and quickly swirl the pan to evenly cover the bottom. Start rolling up omelette from one side to the other as soon as it is set.
-
3
Keep roll to one side, then add another 1/3 of the oil to the skillet and another 1/3 of the egg. Swirl the pan, ensuring the entire bottom is covered, including around and underneath first roll. Cook until set. Roll up from the side containing first roll, including first roll, so you have one roll.
-
4
Repeat the process with remaining oil and egg. Transfer rolled omelette to a bamboo rolling mat. Roll up tightly and allow to cool for a few minutes.
-
5
Unwrap omelette and slice into 6 pieces. Serve warm or cold.

Glo's Sausage Fried Rice
This is an easy-to-prepare fried rice dished passed down by my Japanese mother. You won't find anything like it in the restaurants. Every time we have a family get-together or a covered dish luncheon at work, I am always requested to bring this rice.
Sesame Pepper Stir Fry
Use the meat and veggies you have on hand, or stick to cabbage and peppers for a quick, flavorful, and basic stir fry. Hubby and kids gobble this down before a pretty photo is possible! Serve over rice. This provides 4 people with enough for second servings or a great next-day cold lunch. Chicken, pork, or seafood works as well as beef. Add extra veggies as desired except for more brassicas. Can replace cabbage with broccoli if desired. Great 'whatever's in the fridge' stir fry. Enjoy!
Rajma (Kidney Bean Curry)
Rajma is comfort food at its best. I like rajma best with simple jeera (cumin) rice. Of course, some roti would be great too. When I was in college, I ate rajma at least once a week. Cheap, nutritious, and comforting. What is not to like?
