This requires a flaky pie dough instead of a drop biscuit style topping. If you want to use a refrigerator pie crust instead of making your own that works just fine and the end result is well worth it!
Ingredients
- 5 cans tart pitted cherries packed in water , 14.5 ounce
- 1 cup brown sugar
- 0.5 cups white sugar
- 3 tablespoons quick-cooking tapioca
- 0.5 teaspoons almond extract
- 0.25 teaspoons cinnamon
- 1 pinch salt
- 1 tablespoon butter , diced
- 1 recipe pastry for double-crust pie
- 2 tablespoons milk
Instructions
-
1
Preheat oven to 400 degrees F (200 degrees C).
-
2
In a large bowl, gently stir the cherries, brown sugar, and white sugar until all the sugar has dissolved. Mix in the tapioca, almond extract, cinnamon, and salt. Let stand 15 minutes. Pour into a 9x13 inch baking dish, and dot with butter.
-
3
Roll our pie pastry into a rectangle slightly larger than the baking dish, and place over the cherries. Tuck in corners, and make several slits in the dough. Brush with milk.
-
4
Bake 45 minutes in the preheated oven, until crust is lightly browned and filling is bubbly. Cool 1 hour before serving.

Pound Cake Cupcakes
An easy, yummy pound cake in cupcake form. I got this recipe out of a Southern Living magazine and modified it a little. Enjoy!
Citrus Mousse
This is fast and elegant--everyone always thinks it must be a complicated recipe but it's shamefully simple. I don't know why, but I always confess after serving it that it only took a few minutes to make. Either pour it into one bowl or individual serving dishes, and garnish with fresh fruit, such as strawberries or mandarin slices. Try it with pineapple or lime juice in place of the grapefruit, if you like!
Soft Sugar Cookies V
These cookies, which contain sour cream, are the softest sugar cookies ever! I find that if I roll them a little thick and do not overbake, they are best and stay moist. Use whatever cookie cutters that suit the occasion!
