My mom invented this versatile casserole when my first child was born, and it's been a standard in our household ever since. The ingredients can easily be varied, so use whatever soup and veggies you like!
Ingredients
- 8 large potatoes , peeled and chopped
- 1 pound lean ground beef
- 0.5 cups chopped onion
- 1 can carrots , 15 ounce
- 1 can green beans , 15 ounce
- 1 can condensed cream of mushroom soup , 10.5 ounce
- 1 can condensed tomato soup , 10.5 ounce
- 0.75 cups shredded Cheddar cheese

Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish.

Bring a large saucepan of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain and mash.

While potatoes are cooking, combine ground beef and onion in a large skillet over medium-high heat. Cook and stir until beef is evenly browned and crumbly and onion is tender, 7 to 10 minutes. Drain.

Stir carrots, green beans, and condensed soups into beef mixture. Transfer to the prepared baking dish. Spread mashed potatoes over beef mixture and sprinkle Cheddar cheese over top.

Bake in the preheated oven until potatoes are light golden brown on top, about 30 minutes.

My husband is from Spain, so I started looking into paella recipes. It took me four times to get this brown rice paella right. Now it's his favorite dish, and he expects me to make it every week. I've tweaked this recipe to our tastes, as we like red peppers, capers, and black olives. The vinegar is a Spanish thing, so I always add it. You can leave a little broth in the paella or cook until the broth is fully absorbed โ it's simply a matter of preference.
