Throw cottage cheese, egg, milk and a few other ingredients into a blender, then bake. What's not to love, especially with the added protein and good-for-you ingredients!
Ingredients
- 1 cup cottage cheese , such as good CULTURE
- 0.75 cups high protein 2% milk , such as Fair Life
- 0.25 cups butter
- 1 large egg
- 1 cup self-rising flour
- 1 cup oat flour
- 0.5 cups sugar
- 1 pinch salt
- 0.67 cups semisweet chocolate chips

Gather all ingredients. Preheat the oven to 350 degrees F (175 degrees C). Grease a 12-cup muffin tin or line cups with paper liners.

Combine cottage cheese, milk, butter, and egg in a high speed blender (such as Vitamix); blend until smooth. Add in flour, oat flour, sugar, and salt. Blend in 20 seconds increments until ingredients are just combined. Fold in chocolate chips by hand.

Spoon batter into the prepared muffin cups.

Bake in the preheated oven until tops spring back when lightly pressed and a toothpick inserted into the center of a muffin comes out clean, 22 to 24 minutes. Cool in the tin for 5 minutes.

Transfer to a wire rack to cool completely.
