This Copycat Chipotle Honey Vinaigrette Tastes Just Like the Real Thing
This vinaigrette is delicious as-is for topping burritos, tacos, salads, and more. But, you can take it to another level by adding sour cream for a smoky, slightly spicy creamy sauce.
Ingredients
- 2 chipotless in adobo
- 1 large garlic clove
- 1 teaspoon dried oregano
- 2 tablespoons honey
- 6 tablespoons red wine vinegar
- 0.25 teaspoons ground cumin
- 0.67 cups oil
- Salt and pepper to taste
- Sour cream

Gather all ingredients.

In a blender, combine chipotles and adobo, garlic, oregano, honey, red wine vinegar, and cumin. Blend until smooth, then slowly drizzle in oil with the blender running to emulsify.

Season to taste with salt and pepper and transfer to a sealable jar.

Coconut-Tamari Mushroom Soup
A lovely creamy Thai mushroom soup without the cream. I had something similar to this at a local vegan restaurant that imposes a no-waste policy upon its patrons. I loved the soup, so when I got home I recreated it. It is incredibly simple to make, and incredibly delicious. I would also like to mention that it's best served with a dense bread to dip into the soup. I find olive bread or a spicy bread compliments well.
