This tomato and feta salad with cucumber and fresh basil is simple, refreshing, and full of flavor.

Ingredients

  • 6 romas (plum) tomatoes , diced
  • 1 small cucumber - peeled , quartered lengthwise, and chopped
  • 3 greens onions , chopped
  • 0.25 cups fresh basil leaves , cut into thin strips
  • 3 tablespoons crumbled feta cheese
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • salt and freshly ground black pepper to taste

Instructions
