This simple tomato basil salad recipe has a fresh taste and nice presentation.
Ingredients
- 4 tomatoes , sliced
- 1 onion , sliced and halved
- 0.25 cups fresh basil leaves , or to taste
- 0.5 cups shredded mozzarella cheese

Place tomato slices around edge of a plate, overlapping slightly. Tuck halved onion slices and basil leaves between tomato slices; place mozzarella cheese in center of the plate.

Whisk olive oil, lemon juice, oregano, salt, and black pepper together in a small bowl until well combined; drizzle over tomato salad.

If you have a rind from a piece of Parmigiano-Reggiano cheese, add it to the broth as you cook; if you don't, you may want to add grated Parmesan cheese to the soup.
