Greek Lemon Chicken and Potato Bake
I love one-pan meals, especially when no measuring and exact ingredients are involved. I made this one Sunday when I didn't want to babysit my food in the kitchen! Turned out great, and I served it with tzatziki sauce.
Reuben Nachos
These Reuben nachos are a version of my all-time favorite sandwich. They're a great appetizer for a St. Patrick's Day party or a delicious lunch or dinner entrée to make with leftover corned beef brisket after the holiday.
Gourmet Microwave Popcorn
I keep a jar of popcorn kernels and a small bottle of fancy olive oil in my office. Much better than microwave popcorn, and tastier too.
