This dip packs all the taste of traditional spinach artichoke dip minus the dairy. Serve hot with tortilla chips.
Ingredients
- 1 can artichoke hearts , 8 ounce
- 1 container cream cheese-style spread , 8 ounce
- 0.5 packages fresh spinach , 6 ounce
- 2 tablespoons all-purpose flour
- 0.75 teaspoons garlic salt
- 0.25 teaspoons thyme leaves
- 0.25 teaspoons red pepper flakes
- cooking spray
- 1 cup grated Parmesan-style vegan cheese , such as Follow Your Heart®

Preheat the oven to 350 degrees F (175 degrees C).

Mix artichoke hearts, cream cheese spread, spinach, flour, garlic salt, thyme, and red pepper flakes together in a large bowl.

Coat a large nonstick baking pan with cooking spray; fill pan with the artichoke mixture.

Bake in the preheated oven until center is hot and dip is bubbling, about 25 minutes.

Sprinkle the top of the dip with Parmesan-style cheese.

Old-Fashioned Roasted Pecans
These roasted pecans taste just like they do at the fair. My ex-mother-in-law lives in the South and has lots of pecan trees. She sends me bags of shelled pecans every year for Christmas. Even though they use big roasters at fairs, these turn out just as great.

They also make great finger food for parties. Be sure to remove any jewelry before getting started though - you'll be putting your hands into a very sticky mess, and it can get everywhere! Serve hot with apricot preserves, applesauce, maple syrup, or parmesan cheese. If you have a food processor, that will probably work as well, though I prefer the extra-fine result that comes from using a cheese grater. They can also be frozen and reheated.
