The original recipe for this casserole with Canadian bacon is delicious, but this is my healthier version with less fat and fewer calories. As a single person, I can't eat eight portions in one sitting, so I wrap portions and freeze them. It's great to have on hand for family visits — just reheat each person's serving when they show up for breakfast. It's also great if you're in a hurry in the morning and don't have time to cook before heading off to work.
Ingredients
- cooking spray
- 1.75 cups egg substitute , such as Egg Beaters® Southwestern Style
- 1 cup 2% milk
- 0.5 teaspoons salt
- 0.5 teaspoons ground mustard
- 8 frozens hash brown patties
- 2 packages Canadian bacon , 6 ounce
- 4 cups shredded Cheddar Jack cheese

Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish with cooking spray.

Whisk egg substitute, milk, salt, and mustard together in a bowl.

Layer hash brown patties over the bottom of the prepared baking dish, then cover with Canadian bacon and Cheddar-Jack cheese. Pour egg mixture over top. Cover the dish with aluminum foil.

Bake in the preheated oven for 1 hour. Remove the foil and continue to bake until a knife inserted in the center comes out clean and the edges are golden brown, about 15 more minutes.
