Cajun Catfish Supreme
I entered this Cajun catfish supreme recipe in a large neighborhood Cajun party contest and won first prize. It is an unusual but delicious way of preparing catfish.
Spicy Shrimp Creole
I make many dishes for my friends, but this spicy shrimp Creole dish is demand time after time. Easy to make and tasty as can be.
Barlow's Blackened Catfish
Cajun catfish served up with just the right touch of spices and flavor. This entree is perfect for a quick, excellent way to taste the unique flavor of catfish mixed with the traditional method of down south cooking, just without all the fat. Serve on top of white rice.
Cindy's Jambalaya
This jambalaya is a tradition here in the South. You can add anything you like to this basic recipe. You can add crawfish and chicken pieces or make it all sausage. Decide what you like and add it in!
Red Chard and Caramelized Onions
This dish is good hot or at room temperature. I serve it as a side when the kids want mac and cheese for dinner. They do not eat it, but it makes me feel grown-up. It is very tasty.
Oysters Rockefeller
A traditional recipe for oysters Rockefeller.
Brandy Alexander Cocktail
A brandy Alexander is a rich and creamy cocktail made by shaking brandy, heavy cream, and crème de cacao with ice for the perfect after-dinner drink.
Southern Collard Greens
A must-eat dish on New Year's day.
Ke's Cajun (Dirty) Rice
Ke's Cajun (dirty) rice is rice with a kick. It is best served with Cajun chicken or another Cajun dish. You will love how this complements your main dish; however, because this rice contains some meat, it can be eaten alone. Enjoy!
Braised Collard Greens
My grandma Ollie-Belle made the best braised collard greens. This recipe is as close to hers as I could come. The pot-liquor is the key to great greens. Serve with fresh green onions and black-eyed peas with rice.
Slow Cooker Collard Greens
Got this from a coworker who made these for the office holiday potluck. Collard greens are cooked all day with ham shanks and pickled jalapeno. Yum!
Black-Eyed Pea Patties
Black-eyed pea patties made with bacon, shallots, and roasted red peppers are pan-fried until golden brown and crispy. This recipe calls for canned peas, but for more flavor, I sometimes use leftover peas that I cooked with ham hocks or smoked turkey from New Year's. Get creative with how you serve them; sometimes I top them with fried green tomatoes or leftover candied yams.
