Koula's Best Ever Chicken Gyros
This is an unusual version of classic Middle Eastern gyros (only homemade under the oven's broiler). Very tasty and quick to make. Perfect weekday dinner! You can prepare it in advance, let it marinate and just stick it in the oven. Best served inside pita bread pockets, with salad and yogurt.
Black-Eyed Pea Gumbo
This black-eyed pea gumbo is a wintertime favorite at our house. We always have it for New Year's Day while we watch football! Serve with a tossed salad and cornbread.
Merwin's Shrimp Gumbo
This is a recipe for a classic, dark brown, shrimp gumbo in true Louisiana Cajun country fashion. Serve over rice. Browning the chicken pieces in the oil used for the roux adds flavor to the dish. I use the cooked chicken for chicken salad. File is added off the heat to thicken the gumbo. If added while the gumbo is still cooking, it may become stringy and unpleasant. File is ground sassafras leaves. It is available in many supermarkets.

This chicken and sausage gumbo is made with a seasoned roux, a classic from the bayous of south Louisiana. I revised the recipe after many, many trials. Serve it hot over cooked rice or with potato salad.
Buffalo Turkey Meatloaf
Combining two favorite dishes to make one great meal, this baked meatloaf topped with homemade or your favorite bottled Buffalo wing sauce and served with an easy blue cheese dressing is sure to be a hit. Serve with home-fried potatoes or french fries and a salad!
German Hamburgers (Frikadellen)
Frikadellen, the original hamburger, are served like a flattened meatball with string beans and salad. I also like to use this recipe to make Swedish meatballs (but omit the paprika). My aunt in Hamburg, Germany, taught me this recipe, and I've been making it ever since. Serve with steamed string beans and tossed salad. Or serve on a kaiser roll with lettuce, tomato, pickled cucumbers, finely sliced deep-fried onions, and curry ketchup.
Persian-Inspired Meatballs
Advieh, herbs, and pomegranate molasses give these lamb meatballs a Persian flair. Serve with flatbreads and yogurt or over a green salad. If you go the salad route, include some fresh herbs and pomegranate molasses to match the meatballs.
Merguez Meatballs
These spicy lamb meatballs feature the flavors of North African merguez sausage. Serve with roasted vegetables, over couscous, in flatbreads, or in a salad.

They are basically a Mediterranean-style meatball on a stick. I know "shish" gets more love, but "kofta" might be the best kebab. Serve over a tomato, onion, and cucumber salad with flatbread or pita and a lemony tahini dressing.
Lahmacun Turkish Pizza
This Turkish-style pizza is a Turkish flatbread layered with a fresh sauce composed of tomatoes, sweet bell peppers, and minced lamb cooked with a flavorful selection of Mediterranean spices. It is normally garnished with fresh salad and a creamy garlic sauce and or a tangy, zesty, hot red pepper sauce. It is a really light meal, yet filling and flavorful. I find it worth the time to make if I can't get it from my favorite Turkish bakery in my old neighborhood in Amsterdam. For the best flavor, make the topping the night before you make the pizza.
