Shannon's Stuffed Delicata Squash
This relatively simple recipe makes a lovely presentation as a side or main dish. Delicata squash is a mild squash similar to butternut, which is a suitable replacement squash if you cannot find delicata. This is a great recipe for experimentation. Consider adding to your turkey mixture: red bell pepper, curry, or pine nuts. For a filler, you could add brown, white, or wild rice. Or experiment on your own. Enjoy!
Creamy Delicata Squash Soup
Roasted squash lends a delicate sweetness to this creamy soup. Onions, vegetable broth, and roasted squash are cooked together with non-fat Greek yogurt and processed to a fine consistency for an incredibly rich-tasting soup. Chicken broth works fine for this, too.
Garlic Delicata
Very simple, and very good: semicircles of delicata squash dressed with olive oil and fresh parsley and garlic. You can serve this hot from the oven or at room temperature.
Delicata Squash Gratin
Delicata is a small winter squash with an edible skin, which makes it a breeze to prepare! Wash, slice off the ends, then halve it lengthwise, seed it, and cut into half moon shapes. It is excellent on its own, simply roasted, or baked in this lovely cheese sauce.

This baked delicata squash is tender and sweet, with edible skin. Delicata is an heirloom squash that's creamy yellow with green stripes on the outside and slightly sweet orange flesh โ it's my favorite. My sister suggested this lime butter topping (my personal favorite), but a blend of maple syrup and butter is good too. Delicata squash are usually not very big, so plan on two servings per squash.

I've always wanted to try spaghetti squash but most of the recipes I see are meatless. I like meat. So with that said, I kept it on the healthy side and used ground chicken. I made this for my family and even my 5-year-old who hates veggies loved it, although I did tell him it was just spaghetti.
