Chef John's Twice-Baked Potatoes
When entertaining guests on special occasions, don't forget that you're putting on a show with the food. And, when it comes to starchy side dishes, these twice-baked potatoes are a great way to express flair for the dramatic.
Chef John's Sweet Potato Casserole
Unlike many sweet potato casseroles, this one is not too sweet. It smells so amazing, with subtly sweet potatoes accentuated with maple syrup and a pistachio topping. It's a wonderful combination of taste and textures.
Fast and Easy Creamed Spinach
This somewhat healthy creamed spinach recipe is lighter than traditional creamed spinach. It is a little easier, a little quicker, and a little more contemporary. Have all your ingredients ready to go ahead of time. It's a classic steak side dish.
Smashed Cucumber Salad
This smashed cucumber salad is one of my all-time favorite cold summer side dishes. By crushing our cucumber before we cut it, we produce flavors that un-smashed cukes can't. The only decision you're going to have to make is how long to let the cucumbers marinate — half an hour or so or not at all. Perfect with grilled meat or shrimp.
Persian Rice
This Persian rice with golden potatoes and saffron takes the grand prize. I believe I've posted a few foolproof methods for cooking perfect rice, but the beauty of this method is that it doesn't rely on any specific measurements or exact times. This will make some of you very nervous but just go with it.
Chef John's Braised Red Cabbage
Braised red cabbage is a very beautiful, super easy cabbage side dish. All ingredients in this recipe are totally to taste. It's a little bit sweet and a little bit tangy, with a tiny hint of caraway to interest you.
Kartoffelklöße (German Potato Dumplings)
These German potato dumplings are the latest import to my potato-side dish collection. They're drizzled in browned butter and topped with crunchy croutons, but they're also good topped with bacon, sautéed onions, and mushroom sauce. If you have time, roast the potatoes (instead of boiling them) so they're nice and dry. I like to serve them with sausage and red cabbage.
Pan-Fried Butter Beans
This pan-fried butter bean recipe is delicious, super-easy, and good for you too.
Chef John's Bourbon-Glazed Carrots
These bourbon-glazed, butter-soaked carrots are the greatest special occasion vegetable side dish of all time. Sweet, savory, and oh-so glossy.
"Special" Roasted Potatoes
This recipe for yellow potatoes turns out delicious and crusty. The secret step is boiling the potatoes in a salted, seasoned liquid. As a result, they absorb flavor and salt and, more importantly, cook on the surface, forming a great, crunchy texture in the oven.
How to Make Farinata
Fainè, also called farinata, is nothing more than a simple garbanzo bean flour batter which is spiked with olive oil and salt and baked in a very hot oven. The surface gets crusty and the edges get crispy yet the inside stays moist and sort of creamy. The texture is easy to explain, but the taste, not so much. Very earthy, comforting, and satisfying.
Oven-Baked Onion Rings
These easy baked onion rings are super crunchy and almost as good as any made in a deep fryer. No-muss, no-fuss!
