Fresh Cranberry Upside-Down Cake
This cranberry upside-down cake recipe is amazingly good. My friend gave me the recipe, and I've had it for a while. Then I came across fresh cranberries on sale, so I decided to make it. The first time I made it, I forgot the part where you add the egg whites, and it still came out good — but it's much better with egg whites.

Chef John's Pineapple Upside-Down Cake

Cottage Pudding - Upside Down Cake
This is my husband's favorite. I first made it over thirty years ago. You can use canned peaches or pineapple in place of the sliced apples.
Pineapple Upside-Down Cake from Scratch
This pineapple upside-down cake from scratch is an old-fashioned recipe from my German grandmother. She used this same cake batter for many different fruits as an alternative to pineapple. She often used fresh Italian prunes or pitted fresh cherries. My grandparents owned a bakery, and this cake was very popular in the 1950s and 1960s. Serve it warm or at room temperature with whipped cream.
