Manti (Armenian Dumplings)
If you ever wished for dumplings that are shaped like boats with the meat visible inside, try making these Armenian dumplings called manti. You can use either ground beef or ground lamb and they are traditionally served with either plain yogurt or a yogurt-based sauce.
Reshmi Kebab (Silken Kebabs)
This is a traditional Muglai dish prepared in India. It gets its name from the succulence of the meat after prolonged marinating and light braising. Traditionally, chicken, beef or lamb meat is used, but prawns or scallops are good substitutes too for this smooth as silk kebabs. Serve with chatnis (dips made from coconut, cilantro and mint, usually found in Indian grocery stores) or tomato sauce.

Fårikål
Fårikål is a traditional lamb or mutton recipe from Southern Norway. Lamb and cabbage are layered and stewed with peppercorns. Serve with boiled potatoes that have been sprinkled with parsley.
Grilled "Tandoori" Lamb
Here, "tandoori" refers to the yogurt-based, aromatically spiced marinade that can be used on grilled, broiled, or baked meat. You can adjust the spices to your own personal preferences. Serve with flatbread or rice and cilantro chutney.
Traditional Gyro Meat
Delicious gyros made with homemade gyro meat. This is the closest I've come to emulating my favorite Mediterranean restaurant's recipe. The Greek/Lebanese-style meatloaf is sliced and served with pita bread, tzatziki, and tomatoes. The preparation time seems long, but most of it is resting time, so you can be doing other things!
Steak and Kidney Pie
This hearty steak and kidney pie is a meal in itself! Perfectly seasoned beef and potatoes simmer in a rich gravy beneath a flaky crust for a comforting, hearty old-fashioned pie. I like to use milder flavored lamb kidneys instead of beef.
Roast Leg of Lamb
This leg of lamb recipe is simple to prepare with thin slices of garlic and rosemary. Cooking peeled potatoes in the pan around the roast is yummy. The only other things you need are gravy made from the pan drippings and a fresh vegetable.
Chef John's Irish Stew
Pay attention to the cut of lamb used in this recipe. I used lamb shoulder chops, which are a fantastic value, when you consider flavor, useable meat, and price. They will probably be the cheapest lamb at the store, have more flavor and richness than leg meat, and are cheaper than shanks and loins. It takes a while for the meat to braise and fall off the bone, but it's a wait rewarded with tender, succulent chucks of lamb.
