Ashley's African Peanut Soup
I made up Ashley's African peanut soup recipe after eating a version of African peanut soup at a restaurant. The mixture of ingredients seems a little peculiar, but trust me, they work wonderfully together.
Chicken and Andouille Sausage Gumbo
This chicken and andouille sausage gumbo is a great recipe for those who prefer gumbo without seafood.
Gluten-Free Chicken and Sausage Gumbo
I modified my mother's chicken and sausage gumbo recipe to make it gluten-free. Good gumbo is hard to find for my friend with a wheat allergy. The wheat flour roux is the key ingredient for any gumbo. After experimenting with a few gluten-free alternatives, I find that a light brown millet flour roux thickens the gumbo and gives an excellent taste nearly equal to wheat flour. Most people won't notice the difference.
Merwin's Shrimp Gumbo
This is a recipe for a classic, dark brown, shrimp gumbo in true Louisiana Cajun country fashion. Serve over rice. Browning the chicken pieces in the oil used for the roux adds flavor to the dish. I use the cooked chicken for chicken salad. File is added off the heat to thicken the gumbo. If added while the gumbo is still cooking, it may become stringy and unpleasant. File is ground sassafras leaves. It is available in many supermarkets.
Spicy Shrimp Gumbo
This recipe has been in my family for many years. Delicious during cold winter nights.
Instant Pot Seafood Gumbo
I took one of my favorite gumbo recipes and converted it to cook in the Instant Pot. Chock-full of shrimp, scallops, and cod, it is cooked in a roux that incorporates Louisiana beer.
Shrimp Gumbo with Okra
I kinda winged this shrimp gumbo with okra recipe, but it turned out great! It has real Creole flavors and is so easy to make! I used pre-cooked, Cajun-seasoned shrimp, which made this gumbo with okra much easier, but you can use raw shrimp. Adjust the spice to make it as hot or mild as you like. Leftovers freeze well. Serve with rice and/or crusty French bread!
Baked Chicken and Sausage Gumbo
Gumbo doesn't have to be hard! Instead of slowly cooking and stirring a roux for what seems like forever, try this chicken and sausage gumbo that's baked instead. It's not a shortcut per se, but cooking it in the oven will save you from having to stand over the stove for hours. Serve hot with a spoonful of white rice.
Dupre Family Chicken and Sausage Gumbo
The original, purist, real-deal chicken and sausage gumbo from a certified Cajun. Serve over cooked jasmine rice with hot French bread to dip.
Chef John's Duck, Sausage, and Shrimp Gumbo
The procedure for this duck gumbo with sausage and shrimp is pretty straightforward, although you're talking about a full day's project. This can be made with hundreds of different combinations of smoked meats, game, poultry, and seafood — and in my opinion, the more, the merrier. Serve in a large soup bowl with a scoop of cooked white rice, a sprinkle of green onions, and a pinch of cayenne.
Big Charlie's Gumbo
This is a basic gumbo recipe with a lot of added flavor. You can omit the stew meat if you choose or add something in its place. I recommend you serve this recipe over rice, like many other gumbo recipes.
Rouxless Gumbo
Gumbo has a history of being made with roux, but my mom's recipe didn't have it. This rouxless gumbo is my most requested item at work, tailgating parties, and home. The vegetables really shine in this gumbo!
