I couldn't find exactly what I was looking for, so I combined two of my favorite recipes. Crispy fried chicken in an Asian sweet and sour sauce.

Adriel's Chinese Curry Chicken
My husband is Chinese and this chicken curry is one of our favorite dishes. My late father-in-law, who used to be a Chinese chef, said my version of this was better than his! Yellow curry paste can be found at an Asian market. You may have to add a little more or less curry paste, depending on your taste. I included a more moderate amount in this recipe. I suggest serving this over cooked jasmine rice. It has a little bit of heat, so probably do not serve to small children. Enjoy.
Deb's General Tso's Chicken
This General Tso's chicken uses cornstarch batter for a crisp, golden brown coating. Frying the chicken twice makes it extra crispy. A spicy, sweet soy sauce mixture with ginger and garlic adds incredible flavor. Don't scrimp or replace the ingredients โ you might be disappointed. You can make the sauce and complete the first chicken fry up to 3 days ahead, then complete the second fry before serving. Serve with rice or noodles tossed with steamed vegetables, such as broccoli, zucchini, squash, and green onions.
Avocado Chicken Stir-Fry
I decided to add avocado to my stir-fry after trying a similar dish at a local Chinese restaurant. The avocado tastes so good with snow peas and chicken! Be sure to use unripened avocados so they don't turn to mush during the cooking process. Serve over rice.
