Chicken Adobo I
This is a variation of a recipe my mother taught me after I got married and wanted to make Filipino food for my husband.
Margo's Chicken Adobo
Use equal parts vinegar, soy sauce and water. The secret ingredient is cinnamon. This can also be made in the slow cooker: after browning chicken, onion and garlic, transfer to slow cooker, add the rest of the ingredients, and cook on low for 6 to 8 hours, or 4 hours on high.
Chef John's Hot and Sour Soup
This hot and sour soup is almost always served as an appetizer in a Chinese restaurant. Yes, it's hot, and yes, it's sour, but it's also so much more, and other than a little bit of slicing and dicing, this is relatively quick and easy to make. Add some pork to this, or some little fun-sized meatballs for a fantastic meal. Serve with extra sliced green onions on top.
Got No Beef Stew
Got no beef? That's ok, because I am going to show you how to make something that looks like beef stew, eats like beef stew, and kinda sorta tastes like beef stew without having to use any beef. And whether you're making this because beef is just too expensive, or you are trying to cut down on the amount of beef you eat, or you just enjoy bad grammar β no matter the reason, I really do think you're going to enjoy this! Serve with buttered bread.
Chef John's American Goulash
American goulash was one of my all-time favorite comfort food meals when I was growing up. They served it in my school cafeteria alongside a slice of buttered white bread and a carton of milk. This Americanized version of goulash was invented to stretch a small amount of beef into enough food for a not-so-small family. It's a simple dish that doesn't taste simple, so it's perfect for your weeknight dinner rotation.
Spicy Potsticker Soup
This spicy potsticker soup is fast, easy, incredibly delicious, and takes very little knife work to accomplish. It's exactly what you want when you don't know what you want.
Chef John's Miso Soup
This miso soup is made entirely from scratch and has a simple yet complex flavor. You can now enjoy miso soup at home and not just in a Japanese restaurant.
Chicken Noodle Salad
Get ready to make all sorts of friends when you bring a big bowl of this Asian chicken noodle salad to the next big cookout. The only folks you might scare away are the ones who brought regular pasta salads. There's just something delightfully addictive about this special combination of cold and spicy. This recipe is the perfect catchall for all those summer vegetables we're supposed to be eating more of, as well as any dry leftover chicken you have around.
French Onion Green Bean Casserole
A classic green bean casserole is elevated with some of my favorite flavors from French onion soup β caramelized onions and GruyΓ¨re cheese.
Smashed Cucumber Salad
This smashed cucumber salad is one of my all-time favorite cold summer side dishes. By crushing our cucumber before we cut it, we produce flavors that un-smashed cukes can't. The only decision you're going to have to make is how long to let the cucumbers marinate β half an hour or so or not at all. Perfect with grilled meat or shrimp.
Baked "Fried" Rice
This easy oven method for baked "fried" rice produces something very similar to classic fried rice, but you don't need leftover rice to make it. Just like rice pilaf, the grains of rice get coated in fat before absorbing the cooking liquid, ensuring plump, tender, separate grains with no sticky clumps. If using a different kind of rice or pan size, just adjust the cooking time. Garnish with green onions and serve with a runny poached egg on top if desired.
Oven-Baked Onion Rings
These easy baked onion rings are super crunchy and almost as good as any made in a deep fryer. No-muss, no-fuss!
