A few simple ingredients and the air fryer will turn these baby potatoes into a comforting side dish. They're suitable for any time of year, especially those hot summer days when you don't want to heat up the oven. I like to use mini potatoes that are between 1 to 1 1/2 inches in diameter.
Ingredients
- 1.5 pounds baby red potatoes
- 2 tablespoons olive oil
- 0.5 teaspoons salt
- 0.5 teaspoons granulated garlic
- 0.25 teaspoons black pepper
- 1.5 teaspoons minced fresh rosemary
Instructions
-
1
Preheat an air fryer to 400 degrees F (200 degrees C).
-
2
If potatoes are bigger than 1 1/2 inches in diameter, cut them in half. Combine potatoes, olive oil, salt, granulated garlic, and pepper in a large bowl. Toss to coat.
-
3
Using a slotted spoon, place potatoes into the air fryer basket without overcrowding, reserving any remaining oil in the bowl. You may need to do two batches. Stir rosemary into reserved oil; set aside. Cook potatoes until tender when pierced with a knife, about 15 to 20 minutes, shaking the basket every 5 minutes.
-
4
Return potatoes to the bowl and toss with rosemary oil mixture.

Better than Cracker Barrel Chicken 'n Dumplings
My Grandma grew up on a farm and this was her recipe - no shortcuts but still pretty easy. For best results you must use a whole chicken and flour. You can also use some chicken stock for added flavor. The trick is the lemon, which makes the chicken tender and adds flavor to the soup. Leftovers won't last very long with this.
