Roasted and salted almonds in the air fryer. Store in an airtight container to preserve freshness.
Ingredients
- 0.75 tablespoons very hot water
- 0.75 teaspoons Himalayan pink salt , or to taste
- 2 cups raw almonds
- 1 tablespoon olive oil
- salt to taste

Preheat an air fryer to 325 to 350 degrees F (165 to 175 degrees C) according to manufacturer's instructions.

Stir water and 3/4 teaspoon pink salt together in a small bowl until salt mostly dissolved.

Place almonds in a medium bowl; stir in salt water until coated. Transfer almonds to the air fryer basket.

Bake in the preheated air fryer for 6 to 7 minutes. Stir almonds, return to the air fryer, air fry until almonds turn brown inside, 5 to 6 minutes more.

Return almonds to same mixing bowl; stir in olive oil and salt until completely coated. Allow to cool before serving,

Better than Cracker Barrel Chicken 'n Dumplings
My Grandma grew up on a farm and this was her recipe - no shortcuts but still pretty easy. For best results you must use a whole chicken and flour. You can also use some chicken stock for added flavor. The trick is the lemon, which makes the chicken tender and adds flavor to the soup. Leftovers won't last very long with this.
Spinach Rolls with Puff Pastry
This spinach puff pastry snack is a vegetarian version of mini sausage rolls with a spinach and feta filling. I used frozen spinach because it was a better buy than fresh at the time but the equivalent amount of fresh spinach, chopped and wilted, would do the job.
