A quick and easy breakfast for one serving. This gives you time to do other things while the frittata is air frying.
Ingredients
- nonstick cooking spray
- 2 large eggs
- 1.5 tablespoons heavy whipping cream
- 1 cup coarsely chopped spinach leaves
- 0.5 cups diced mushrooms
- 0.25 cups shredded sharp Cheddar cheese
- salt and freshly ground black pepper to taste
Instructions
-
1
Preheat an air fryer to 400 degrees F (200 degrees C). Spray a 4 1/2-inch ramekin with nonstick spray.
-
2
Whisk eggs and cream together in a bowl. Stir in spinach, mushrooms, Cheddar cheese, salt, and pepper until well combined. Pour into the prepared ramekin and cover tightly with foil.
-
3
Air-fry for 12 minutes. Remove foil and air-fry until top starts to brown and a toothpick inserted into the center comes out clean, 4 to 8 more minutes.

Traditional Russian Pirozhki
I'm Russian, and this recipe has been handed down from my grandma. They taste delicious, and are a great comfort food (or any other food).
Pistachio Torte
This nostalgic pistachio torte has a nutty shortbread crust layered with cream cheese filling, fluffy pistachio topping, and whipped topping. Sweet, crunchy, and creamy, it is reminiscent of the happy desserts of childhood.
Fresh Cherry Ice Cream
This cherry ice cream has chunks of delicious sweet black cherries dotted throughout. You can use red cherries if you prefer a tarter flavor — I just love the crimson color and sweetness in ripe dark cherries. Whatever you decide, this homemade ice cream is a great way to celebrate summer cherries!
