These vegan sweet potato fritters are crunchy yet soft on the inside, with a hint of spice — plus, they're vegan!
Ingredients
- 1.5 cups shredded sweet potato
- 0.5 cups almond flour
- 0.25 cups finely diced onions
- 0.5 tablespoons olive oil
- 0.5 teaspoons salt
- 0.5 teaspoons freshly ground black pepper
- 0.25 teaspoons ground turmeric
- avocado oil cooking spray

Preheat an air fryer to 350 degrees F (175 degrees C).

Combine shredded sweet potato, almond flour, onions, olive oil, salt, pepper, and turmeric in a bowl; stir until well combined. Scoop into 9 balls using a large cookie scoop and form into patties. Place patties into the air fryer basket making sure they are not touching. Spray tops with cooking spray.

Cook in the preheated air fryer until fritters start to brown at the edges, 10 to 12 minutes. Flip fritters over, spray with cooking spray, and air-fry an additional 6 to 8 minutes. Let rest for 1 minute before removing from the air fryer basket.

I could not be more pleased with how this Mongolian Meatloaf experiment turned out. Since I couldn't decide whether to make meatloaf or Mongolian beef, I decided to try both things at once. The result is a tender meatloaf, sliced and crisped in a skillet and served with a sweet, salty, savory sauce, which, like the American Chinese restaurant favorite, Mongolian Beef, is not remotely Mongolian. But it sure is delicious, especially served over steamed rice with bok choy.
