I love osso buco. To me, not only is it comfort food at its best, but it is also a great choice when entertaining. Plus it's so easy to prepare!
Ingredients
- 0.25 cups all-purpose flour
- 2 tablespoons chopped fresh parsley
- salt and ground black pepper to taste
- 4 veals shanks
- 2 tablespoons olive oil
- 1 large onion , chopped
- 4 carrots , diced
- 4 stalks celery , diced
- 0.5 cups dry white wine
- 1 can diced tomatoes , 14.5 ounce
- 1 tablespoon chopped fresh thyme
- 2 bays leaves
Instructions
-
1
Preheat oven to 400 degrees F (200 degrees C).
-
2
Mix flour and parsley in a bowl; season with salt and pepper. Dip veal shanks into flour mixture, shaking off excess flour.
-
3
Heat olive oil in a large skillet over medium heat. Fry veal in hot oil until browned, about 10 minutes; transfer to a large baking dish. Return skillet to stove.
-
4
Cook and stir onion, carrots, and celery in the skillet used to fry veal until vegetables begin to brown, about 5 minutes. Transfer vegetables to the baking dish and pour wine into the skillet. Bring to a boil, scraping up any browned bits from the skillet. Reduce heat to medium-low and continue to simmer until wine is reduced by half, about 5 minutes.
-
5
Stir tomatoes, thyme, and bay leaves into wine. Simmer until tomatoes are hot, about 10 minutes. Pour tomato mixture over veal and vegetables. Stir to combine. Cover baking dish with aluminum foil.
-
6
Bake in the preheated oven until veal is very tender, about 90 minutes.

Magical Unicorn Poop Meringues
This spin on classic meringues is fun and tasty! I have even turned off the heat and let them continue to sit in the oven overnight. They are not so much baking as they are drying out the moisture. Although humidity can affect them, I have made them on many a wet day day here in rainy Oregon. I hope you enjoy them!
Super Summer Kale Salad
This kale salad was recreated from a deli salad that I love! It combines kale, edamame, red onion, shredded carrot, fresh blueberries, dried cranberries, nuts, and seeds with a tangy dressing. This recipe makes a huge bowl, enough to serve a crowd.
Homemade Roasted Chicken Noodle Soup
Roasted chicken and homemade stock join tender veggies and egg noodles in this homemade chicken noodle soup that's literally food for the soul! With rich, comforting flavor and added depth from roasting, it's so much better than anything out of a can and will make anyone who is under the weather feel better. Serve with saltine crackers, like my momma did... or Texas toast is tasty too!
