Ingredients

- 3 large eggs , beaten
- 1 tablespoon apple cider vinegar
- 3 medium ripe bananas , mashed
- 0.25 cups coconut oil , melted
- 0.25 cups honey
- 1 teaspoon vanilla extract
- 3 cups almond flour
- 1 teaspoon ground cinnamon
- 0.75 teaspoons baking powder
- 0.5 teaspoons ground nutmeg
- 0.5 teaspoons salt

Gather the ingredients.

Preheat the oven to 300 degrees F (150 degrees C). Spray a 9x5-inch loaf pan with cooking spray.

Whisk eggs and vinegar together in a bowl. Stir in bananas, coconut oil, honey, and vanilla until blended.

Sift almond flour, cinnamon, baking powder, nutmeg, and salt together in a large bowl.

Stir dry ingredients into wet ingredients until well blended.

Pour batter into the prepared bread pan.

Bake in the preheated oven until a knife inserted into the center comes out clean, about 1 hour; cover with foil if it begins to brown too much. Cool in the pan for 10 minutes, then remove loaf and cool completely on a wire rack.
