- 2 whole cloves
- 1 star anise
- 1 cinnamon stick
- 6 cups apple cider

Tie cloves, star anise, and cinnamon stick in a cheesecloth to make a spice bag. Place in a large saucepan and pour in apple cider.

Bring to a boil over high heat. Reduce heat to medium and simmer, uncovered, about 30 minutes. Discard spice bag. Simmer until reduced to 3⁄4 cup, about 1 hour. Let cool completely. Chill, covered, until ready to serve (or up to 3 weeks).
