Arugula is a delicious alternative to lettuce, and the citrus juice dressing is a delicious alternative to heavier store bought dressings. A lovely precursor to most meals, or a great stand-alone in the summer. Garnish with walnuts or sunflower seeds, if you like.
Ingredients
- 0.33 cups freshly squeezed grapefruit juice
- 0.33 cups freshly squeezed orange juice
- 0.33 cups extra virgin olive oil
- salt to taste
- 6 ounces arugula - rinsed , dried and torn
- 1 pear , cored and sliced
- 1 red bell pepper , thinly sliced

In a jar with a tight fitting lid, combine grapefruit juice, orange juice, olive oil, and salt. Shake vigorously.

In a salad bowl, combine arugula, pear, and red pepper. Drizzle dressing over salad, and toss to coat. Serve immediately.

High Temperature Eye-of-Round Roast
Eye of round roast is roasted at 500 degrees F until juicy and delicious. This recipe takes a very tough piece of meat and makes it so tender. Feel free to improvise with the seasonings and use garlic salt instead of regular salt. This is the easiest roast you'll ever cook!
