Are you looking for a refreshing salsa recipe for a warm summer evening? This avocado, tomato, and mango salsa is our favorite. Serve with tortilla chips. It is also fantastic served on white fish. I often use canned jalapeños instead of fresh.
Ingredients
- 4 medium tomatoes , diced
- 1 mango , peeled, seeded, and diced
- 1 avocado , peeled, pitted, and diced
- 1 jalapeño chile pepper , seeded and minced
- 0.5 cups chopped fresh cilantro
- 3 cloves garlic , minced
- 0.25 cups chopped red onion
- 3 tablespoons olive oil
- 2 tablespoons fresh lime juice
- 1 teaspoon salt

Vegan Chickpea Curry without Coconut Milk
This recipe was given to me by my boss, who is Asian. It has been passed through generations of her family so as you can imagine it is the real deal. Very healthy and super tasty. You can serve it as a side or main. Serve with either rice, bread, bhaji, or samosas.
Coconut Milk Syrup
We spent a summer on Oahu and ate our way around the island. One of the things we sorely miss is coconut syrup. This easy recipe is a close substitute until we can make it back to Hawaii for the real stuff. Mahalo.
