Ashley's African Peanut Soup
I made up Ashley's African peanut soup recipe after eating a version of African peanut soup at a restaurant. The mixture of ingredients seems a little peculiar, but trust me, they work wonderfully together.
Baked Chicken and Sausage Gumbo
Gumbo doesn't have to be hard! Instead of slowly cooking and stirring a roux for what seems like forever, try this chicken and sausage gumbo that's baked instead. It's not a shortcut per se, but cooking it in the oven will save you from having to stand over the stove for hours. Serve hot with a spoonful of white rice.
Grandmaw Cain's Beef Tips and Rice
This is one of my family's favorite meals. I got this recipe from my Grandmother. I love to serve this with a side of green beans. Great the next day and reheats or freezes well. Great on those rainy days.
