Chipotle Coleslaw
Spice up your BBQ sandwiches with my Southwestern tweak on this cookout classic. Use fewer chipotles if you don't like heat, because this coleslaw recipe has a kick. For the chipotles and adobos, buy chipotles in adobo from any grocery store's international aisle.
Rich Dark Fruitcake
This is my mother's very old recipe, at least 60 years old. My mother baked this for my wedding, and it sure is delicious and also a great Christmas cake. This is a very long recipe, but well worth the trouble. You can substitute a cup of drained maraschino cherries for the candied cherries, if you like.
Vegan Coconut Caramel
I use this caramel for making diary-free Twix® bars! It has a delicious caramel flavor, and is just as yummy as all those non-vegan alternatives out there. In fact, I'm not vegan, and I prefer it! You could make it a little harder to make caramel candies, or a little runnier for dipping caramel apples.
