Oven-roasted celeriac sticks are a lovely accompaniment to your main dish or even alone, just for a snack. The light celery flavor goes well with a spicy homemade ketchup. I tried two different methods to achieve the crispiest fries, and this was the one that I preferred. I served it with homemade harissa ketchup.
Ingredients
- ½ celeriac , peeled and cut into 1/2-inch sticks
- 1 tablespoon olive oil
- salt and ground black pepper to taste
Instructions
-
1
Preheat the oven to 225 degrees F (99 degrees C). Line a large baking sheet with aluminum foil and place in the oven to preheat.
-
2
Place celeriac in a bowl; drizzle olive oil over and season with salt and black pepper. Toss fries to coat evenly.
-
3
Remove baking sheet from the hot oven. Transfer fries to the baking sheet in a single layer with some space between them.
-
4
Bake in the preheated oven for 20 minutes.
-
5
While fries bake, combine tomato paste, tomato sauce, apple cider vinegar, harissa, brown rice syrup, coriander, garlic powder, onion powder, and sea salt in a small bowl. Stir to combine until smooth. Add water, 1/4 teaspoon at a time until desired consistency. Set ketchup aside.
-
6
Remove fries from oven and increase oven temperature to 450 degrees F (230 degrees C). Flip fries and return baking sheet to the hot oven. Bake until crispy, about 15 minutes more.
-
7
Serve celery root fries with harissa ketchup.

A Drama Queen's Pavlova
Australians and New Zealanders both claim Pavlova and this recipe is so easy it feels like cheating! I first had it when a friend brought it to our final dress rehearsal and begged her for the recipe! It is especially striking when the fruits and berries are in season. Personally, I like to add coconut for the crunch, but it's NOT sweetened coconut – it's unsweetened, in big flakes, and I get it from the fruit and nut guy at our commissary. It's a real crowd pleaser and the best thing about it is you can make it a day ahead. Just allow the meringue to fully cool and cover lightly with plastic wrap. Top with whipped cream and fruit just prior to serving.
Baked Artichokes with Herb Butter
This simple and fresh side dish features in-season artichokes with a flavorful herb butter for dipping.
Easy Crustless Quiche
This crustless quiche recipe makes a very rich, cheesy, and low-carb meal without the fuss of making a crust! The ratio of egg to cream can be customized to your personal choice and the cheese can easily be replaced with any hard shredded cheese such as Swiss, Cheddar, Gouda, or provolone.
