Ingredients
- 2 cans garbanzo beans , 15 ounce
- 2 cans black beans , 15 ounce
- 0.5 cups (packed) chopped fresh mint
- 0.5 cups (packed) chopped fresh parsley
- 0.5 cups chopped onion
- 1 pint grape tomatoes , halved
- 1 jalapeño pepper , finely chopped
- 1 clove garlic , minced
- 0.25 cups olive oil
- 3 tablespoons lemon juice
- 5 tablespoons apple cider vinegar
- salt and ground black pepper to taste

Mix together garbanzo beans, black beans, mint, parsley, onion, and grape tomatoes in a large salad bowl until well combined.

Place jalapeño pepper, garlic, olive oil, lemon juice, and apple cider vinegar into a blender. Blend until dressing is thoroughly combined.

This soup is great for a cold fall day. I don't often cook using recipes so all amounts are my best guess but feel free to experiment - this recipe is great no matter what I seem to do with it. One helpful hint with the squash: It is really hard to peel so I do not peel it but instead roast it and then scoop the insides out into the soup. It's much easier that way!
