These banana blueberry muffins are so easy to make, and absolutely delicious!
Ingredients
- 2 cups whole wheat flour
- 0.33 cups brown sugar
- 0.5 teaspoons ground cinnamon
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1.5 cups mashed bananas
- 4 eggs whites
- 1 teaspoon vanilla extract
- 1 cup fresh blueberries

Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 12-cup muffin pan.

In a large bowl, mix whole wheat flour, brown sugar, cinnamon, baking powder, and baking soda. In a separate bowl, mix bananas, egg whites, and vanilla extract.

Mix banana mixture into flour mixture until smooth. Fold in blueberries. Spoon batter into the prepared muffin pan.

Bake 16 minutes in the preheated oven, or until a toothpick inserted in the center of a muffin comes out clean.

My Mom's Raised Doughnuts
I used to make this recipe for my Mom's raised doughnuts with my Mom when I was a little girl. She would make dozens a week and give to neighborhood kids. I would coat them with that ooey good frosting. I won a blue ribbon with this recipe. It was also featured and put in newspapers all over the USA. Then, it was voted one of the 100 top recipes in the 2011 Members Choice cookbook. The doughnuts are like eating a flavored cloud. They're so light and fluffy. I hope you enjoy them as much as we do.
Watermelon Gin and Tonic
Pretty much an amazing summer drink. All the perfection of a great gin and tonic, but with a little twist. Plus, it looks pretty! I like this drink sitting in the backyard while grilling anything! I think it also makes a good winter drink when you need a quick 'get-away,' as long as you can find the watermelon!
