This basil turkey burger recipe gets a thumbs up from the teenagers and boyfriend who hate anything low-fat. For those not concerned about fat intake, I add cheese.

Brown Spanish Rice
I like to use brown rice whenever possible, but Spanish rice recipes all seem to call for white. This brown Spanish rice recipe is the result of many attempts to come up with an easy yet spicy Tex-Mex version.
Frog Eye Salad
This frog eye salad is made with acini di pepe (or couscous) pasta, coconut, pineapple, mandarin oranges, and marshmallows for a sweet, chilled holiday dessert.
The Best Bean and Ham Soup
Legume fans who enjoy 7-bean soup will love this extra beany version made with a dried 15-bean mix. I make this hearty soup using the ham bone from our Easter spiral ham and serve it with corn muffins and fresh fruit. It makes a huge pot of soup, so invite some friends over or just freeze several portions for later use. Remember to soak the beans the night before you make the soup.
