This breakfast burrito with bacon and eggs is a different way to make burritos. Burritos with fried eggs, bacon, and refried beans are topped with melted cheese to create a savory dish. Serve with salsa on the side, and you are good to go!
Ingredients
- 1 pound bacon
- 10 eggs
- 1 , 16 ounce
- 8 ounces shredded Cheddar cheese
- 10 , 10 inch

Place bacon in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, and set aside. Wrap tortillas in foil and warm them in the oven.

Fry eggs in a greased skillet until firm. In a small saucepan, heat refried beans.

Top each tortilla with refried beans, 2 strips of bacon, 1 egg, and a little cheese. Roll tortillas into burritos and serve.

Dairy-Free Savory Sausage Gravy
This dairy-free sausage gravy is a fairly basic, large-batch gravy recipe that I've developed over time. The family loves it every time, so the large batch is needed! Normally I'd use soy milk for most things, but I've found that in greater quantities it tends to froth badly. Almond milk does not have this problem though. Serve over warmed biscuits or the toasted bread of your choice.
Eggplant and Ground Beef Lasagna
I couldn't decide if I wanted lasagna or moussaka the other night; this eggplant lasagna with meat came out as a yummy combo of the two! Spinach lasagna noodles work well in this if you can get them. Also, try ground lamb in place of beef for another variation.

Made with wild blueberries, this sauce adds a zing with lemon juice, orange juice, and lemon zest. Serve over waffles or pancakes.
