My friend's wife introduced me to this simple, delicious broccoli soup. I'm not a fan of broccoli, but I loved this soup, and enjoyed every bite!
Ingredients
- 1 tablespoon olive oil
- 1 large onion , chopped
- 3 cloves garlic , peeled and chopped
- 2 , 10 ounce
- 1 potato , peeled and chopped
- 4 cups chicken broth
- 0.25 teaspoons ground nutmeg
- salt and pepper to taste
Instructions

Heat oil in a large saucepan. Add onion and garlic, and sauté until tender.

Add broccoli, potato, and chicken broth. Bring to a boil, reduce heat, and simmer until vegetables are tender, about 15 minutes.

Purée mixture with an immersion blender or in a countertop blender until smooth. Reheat, if necessary, season with nutmeg, salt, and pepper, and serve.
