A chocolate version of an Italian favorite. You can substitute milk for the water in the egg wash, if you wish.

Ingredients

  • 0.33 cups butter , softened
  • 0.67 cups white sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1.75 cups all-purpose flour
  • 0.33 cups unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 0.5 cups miniature semisweet chocolate chips
  • 0.25 cups chopped walnuts
  • 1 egg yolk , beaten
  • 1 tablespoon water

Instructions

    Preheat oven to 375 degrees F (190 degrees C). Grease baking sheets, or line with parchment paper.

    In a large bowl, cream together the butter and sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Combine the flour, cocoa and baking powder; stir into the creamed mixture until well blended. Dough will be stiff, so mix in the last bit by hand. Mix in the chocolate chips and walnuts.

    Divide dough into two equal parts. Shape into 9x2x1 inch loaves. Place onto baking sheet 4 inches apart. Brush with mixture of water and yolk.

    Bake for 20 to 25 minutes in the preheated oven, or until firm. Cool on baking sheet for 30 minutes.

    Using a serrated knife, slice the loaves diagonally into 1 inch slices. Return the slices to the baking sheet, placing them on their sides. Bake for 10 to 15 minutes on each side, or until dry. Cool completely and store in an airtight container.

Simple Double Chocolate Biscotti

These are a perfect treat with a cup of coffee for breakfast, with tea in the afternoon or for a light dessert. Fancy enough for company but simple enough to make every day. Adding coffee granules enhances the flavor of the chocolate. I like to melt 1/4 cup white chips in a quart size freezer bag, cut off one tiny corner and drizzle the melted chips over the top of the biscotti once they have cooled completely.

Basic Sugar Cookies - Tried and True Since 1960

This sugar cookie recipe with self-rising flour is from my backwoods Mississippi grandmother. My mom kept the recipe, and we grew up eating raw cookie dough before snacking on the cookies during the holidays. This will always be my basic cookie dough recipe. It's quick and easy to make with everyday ingredients in the most sparsely stocked kitchens. You don't have to be a master chef to get a batch of these light and buttery cookies to turn out well. Royal icing is recommended, but these are also wonderful without icing.
