This is a baked version of the popular spicy appetizer. Use more or less cayenne to taste.

Ingredients

  • 4 skinless , boneless chicken breast halves - cut into finger-sized pieces
  • 0.25 cups all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon cayenne pepper
  • 0.5 teaspoons salt
  • 0.75 cups bread crumbs
  • 2 eggs whites , beaten
  • 1 tablespoon water

Instructions

  1. 1

Preheat oven to 400 degrees F (205 degrees C). Coat a baking sheet with a nonstick spray.

  2. 2

In a bag, mix together flour, 1/2 teaspoon garlic powder, 1/2 teaspoon cayenne pepper, and 1/4 teaspoon salt. On a plate, mix the bread crumbs with the rest of the garlic powder, cayenne pepper, and salt.

  3. 3

Shake the chicken pieces with the seasoned flour. Beat egg whites with 1 tablespoon water, and place egg mixture in a shallow dish or bowl. Dip seasoned chicken in egg mixture, then roll in the seasoned bread crumb mixture. Place on prepared baking sheet.

  4. 4

Bake for about 8 minutes in the preheated oven. Use tongs to turn pieces over. Bake 8 minutes longer, or until chicken juices run clear.

Shredded Pork and Sauerkraut

This pulled pork and sauerkraut dish is great for serving a large crowd, buffet-style, on New Year's Day. The longer you cook this dish, the more flavorful the kraut will be! It can also be made in a slow cooker.

Pizza Focaccia

Don't tell your friends from Chicago, but this is an easy take on deep-dish-style pizza. While it's far from authentic, it sure is delicious! By layering the cheese on first, you get lots of crispy, golden edges—which my family tends to fight over. Since this pizza is quite doughy, it's best to cut it into thin strips to serve. As for the sauce, less is more. I like to add small dollops all over the surface to ensure even distribution and maximum crispiness. If you're craving some spice, my favorite topping to hit this with as soon as it comes out of the oven is a hefty drizzle of hot honey.

Pouding Chomeur

Though it translates to 'unemployed man's pudding,' pouding chomeur isn't cheap to make. The good news is you don't really need to eat this more than a few times a year anyway. It's the perfect dessert to pair with summer fruit or vanilla ice cream. If you use a bigger baking dish than I did, and pour over all the maple cream syrup, your cake should float over a pool of what will eventually be your sauce. If you just use a deep pie dish like I did, then just serve the extra sauce on the side.
