This vegetable, chicken, cheese, and rice casserole is an easy-to-prep, one-dish meal!
Ingredients
- 2 cups fresh or frozen vegetables
- 1 can Campbell's® Condensed Cream of Chicken Soup , 10.5 ounce
- 1.33 cups water
- 0.75 cups uncooked regular long-grain white rice
- 0.5 teaspoons onion powder
- 4 skinless , boneless chicken breasts
- 0.5 cups shredded Cheddar cheese

Preheat the oven to 375 degrees F (190 degrees C).

Mix vegetables, condensed soup, water, rice, and onion powder together in a 12x8-inch shallow baking dish. Arrange chicken breasts on top; cover.

Bake in the preheated oven until chicken is no longer pink and cooked through, about 45 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Top with shredded cheese and serve.

Chicken Almost Carbonara
Like lots of others, right now I'm looking for ways to use leftovers and pantry items, to avoid extra trips to the grocery, and to save money. I had leftover cooked chicken and some mushrooms in the refrigerator that I needed to use. I had pasta in the pantry, but alas, no cream, so this dish kind of "grew like Topsy" with ingredients I already had on hand--a partial bottle of white wine, frozen peas, and parsley right outside the door. My son said, "Hey, this is almost like carbonara," and the name was born!
