Carlota de limón is the Mexican variation of a charlotte, a deliciously refreshing lime icebox cake that requires just four ingredients!
Ingredients
- 2 cans evaporated milk , 14.5 ounce
- 2 cans sweetened condensed milk , 14.5 ounce
- 0.75 cups lime juice , or more to taste
- 0.67 packages Mexican Maria cookies , 20 ounce

Combine evaporated milk, condensed milk, and lime juice in a bowl; whisk until mixture is thick and smooth.

Line a glass bowl or trifle dish with Maria cookies and cover them with a generous layer of the milk mixture. Add another layer of biscuits and milk. Continue the layering, ending with a layer of the milk mixture.

Refrigerate for at least 6 hours, but better if overnight. Remove from the fridge just before serving.

Mrs. P's Biscotti
This was given to me by my very best friend; it's her mother's recipe, and a wonderful basic biscotti recipe. Very rarely do I make them the same way twice. You can add dried cherries, cranberries, walnuts, toasted almonds, chocolate, white chocolate or cinnamon chips, or nothing at all -- It's good enough to stand on its own. I also change the flavorings and use almond or vanilla extracts. These will keep for a couple of weeks (if you're lucky) in your cookie jar!
Quiche
This easy quiche is one of my all-time favorites! This recipe can be made-ahead, frozen, and baked later. My mother, who got this recipe from her friend Betty, used to make mass quantities and take them out whenever she needed one for an easy meal. She made it with light cream instead of milk.
Bobotie (South African Beef Casserole)
