This is the carrot-raisin salad I made in sixth grade home economics class, and it's still a favorite! Made with crisp shredded carrots, plump raisins, and a creamy dressing, the recipe strikes the perfect balance of textures and flavors.

Ingredients

  • 0.5 cups sour cream
  • 0.5 cups light mayonnaise
  • 1 tablespoon lemon juice
  • 0.5 teaspoons salt
  • 1 tablespoon brown sugar
  • 4 cups shredded carrot
  • 1 cup raisins

Instructions

  1. 1

Whisk sour cream, mayonnaise, lemon juice, salt, and brown sugar together. Add carrots and raisins and stir until coated.
