This carrot potato gratin is nicely cheesy, and really tasty. You'll love the combination of sweet carrots and potatoes, and it is a pretty, golden-brown gratin.

Ingredients

  • 1.5 pounds carrots
  • 1.5 pounds Yukon gold potatoes
  • 8 ounces Gruyere or white Cheddar cheese
  • 0.5 cups grated Parmesan cheese
  • 1 tablespoon fresh thyme
  • 0.5 teaspoons salt
  • 0.25 teaspoons ground black pepper
  • 0.13 teaspoons nutmeg
  • 1 cup heavy cream

Instructions

  1. 1

Gather all ingredients. Preheat the oven to 350 degrees F (180 degrees C). Grease a 9x13-inch baking dish.

  2. 2

In a large bowl combine carrots, potatoes, 1 1/4 cups Gruyere cheese, the Parmesan, thyme, salt, pepper, and nutmeg. Toss to combine.

  3. 3

    Spread in prepared baking dish.

  4. 4

Pour cream evenly over carrot mixture. Cover with foil.

  5. 5

Bake in the preheated oven for 1 hour and 15 minutes. Remove foil.

  6. 6

Sprinkle with remaining 3/4 cup Gruyere cheese.

  7. 7

Bake, uncovered, until golden brown and vegetables are fork tender, 30 to 40 minutes. Let stand 10 minutes before serving.
