Peppermint Mocha Cupcakes
Intense chocolate cupcakes with a hint of peppermint and coffee. I like them frosted with a simple whipped cream (consisting of heavy cream, powdered sugar, and vanilla), but they'd be delicious with a white chocolate or vanilla buttercream as well!
Chicken and Corn Chili
This chicken and corn chili is an easy slow cooker meal. Use your imagination and season it up as you like. Great on a c-c-c-cold winter night! I serve this with grated cheese, sour cream, chopped cilantro, and green onions with flour tortillas on the side.

Similar to hoppin' John, this is a great way to turn your New Year's black-eyed peas into a main dish.
