These Cheesy Mashed Potato Stuffed Mushrooms are so elegant your guests will think you slaved over them. Your secret is safe with us.
Ingredients
- 1 package Idahoan® Buttery Golden Selects Mashed Potatoes , 14.1 ounce
- 1.5 cups shredded white Cheddar cheese
- 0.5 cups chives , chopped
- 1 cup chopped , cooked bacon or prepared bacon bits
- 6 tablespoons olive oil
- 4 tablespoons minced garlic
- 24 large mushrooms , or more depending on size

Preheat oven to 350 degrees F.

Prepare mashed potatoes according to package directions.

Add shredded cheese (reserve enough to top mushrooms), chives and bacon.

Remove stems from clean mushrooms and stuff caps with potato mixture.

Spread olive oil and minced garlic on bottom of walled cookie sheet or baking dish. Place mushrooms on top.

Sprinkle shredded cheddar over the top of the mushrooms.

Bake for 20-25 minutes.

'Unstuffed' Cabbage with a Kick
This is an alteration on a typical stuffed cabbage recipe. It's healthy, low-fat, low-carb, and a bit spicy. You can't go wrong with this recipe! You may omit the red pepper and cayenne if you do not like spicy foods, or increase like we do! We serve this over brown rice to make it more of a whole meal. We love it! I used roasted garlic-flavored tomato sauce for extra 'kick.'
