A delightful and healthy smoothie bowl. Great for breakfast on a hot day or an afternoon snack. I garnish mine with coconut chips, extra fruit, and sometimes granola. Fresh fruit can be used in place of frozen; add 1 cup of ice for blending.
Ingredients
- 0.5 cups low-fat Greek yogurt
- 0.33 cups coconut water
- 0.25 cups frozen strawberries
- 0.25 cups frozen peaches
- 0.25 cups frozen mango chunks
- ½ banana , chopped
- 2 tablespoons chia seeds , divided

Combine yogurt, coconut water, strawberries, peaches, mango, banana, and 1 tablespoon chia seeds in a blender; blend until smooth. Pour smoothie into a bowl and top with remaining 1 tablespoon chia seeds.

Quesillo (Venezuelan Flan)
The Venezuelan quesillo recipe, pronounced ke-see-yo, has bounced around our family since as long as I can remember. I frequently get calls asking about my exact recipe. It's not everyday your grandmother asks you how to cook something! I will however warn you: quesillo is not for everyone. I have learned that some people just don't like the texture. To that I can only really say that at least there will be more for the rest of us.

Hummus Grilled Cheese Sandwich
My sister-in-law served us this hummus grilled cheese sandwich after seeing it posted on the Dallas Arboretum bulletin board. I thought it was too good not to share, and it's a perfect choice for Meatless Monday. We especially enjoy rye or sourdough for this sandwich.
