This chicken, broccoli, and rice skillet is a complete dinner in one dish–entrée, vegetable, and rice–essentially a casserole that does not heat up the whole kitchen, and cheese tops it off. It's a great choice for family weeknights.
Ingredients
- 1 tablespoon butter
- 1 small onion , diced
- 1 boneless skinless chicken breast
- 0.25 cups orzo , optional
- 1 box garlic and herb rice mix , 6.3 ounce

- 0.5 cups milk
- 1 can cream of chicken soup , 10.5 ounce
- 0.5 teaspoons oregano
- 0.5 teaspoons garlic
- 12 ounces broccoli florets
- 1 cup sharp Cheddar cheese
Instructions
-
1
Melt butter in a large nonstick skillet over medium heat. Add onion; cook and stir until softened and translucent, about 5 minutes.
-
2
Meanwhile, cut chicken breast into bite-sized pieces. Add chicken to the skillet; cook and stir until golden, about 5 minutes.
-
3
Add orzo and rice with seasoning packet to skillet. Stir chicken broth, milk, cream of chicken soup, oregano, and garlic together in a medium bowl; pour mixture into skillet. Stir to combine; add broccoli florets.
-
4
Reduce heat to low, cover, and cook until rice and orzo are tender with a bite and liquid is absorbed, about 25 minutes
-
5
Turn on the oven's broiler and set a rack 6 inches below the heating element. Sprinkle cheese over the skillet, and broil until cheese is golden and melted, about 3 minutes. Serve immediately.

Pineapple Upside-Down Pound Cake
I specialize in all kinds of pound cakes, and this is one of my favorite pineapple upside-down pound cake recipes. You bake the cake in a fluted tube pan, and you can add pineapple pieces to the cake batter.
Homemade Mince Pie with Crumbly Topping
This homemade mince pie with crumbly topping has no meat (it's a mock mincemeat pie). It doesn't use mincemeat mixes or prepared pie crusts. It's homemade like Ma (or Grandma) used to make. Enjoy it! I made it for my father for Father's Day (he loves mince pie).
Cranberry-Orange Shortbread Cookies
An easy slice-and-bake shortbread cookie with plenty of orange and cranberry flavor. The dough needs at least 4 hours of refrigeration time before baking--but will keep in the fridge for up to 5 days.
