This easy chicken Caesar pasta salad is a summertime favorite. We sometimes make it with shrimp instead of chicken.
Ingredients
- 1 box mini penne pasta , 16 ounce
- 1.5 pounds chopped cooked chicken
- 0.5 cups diced green bell pepper
- 0.33 cups grated Parmesan cheese
- 0.33 cups chopped red onion
- 2 large hard-boiled eggs , chopped
- 0.5 bottles creamy Caesar salad dressing , 8 ounce
Instructions
-
1
Bring a large pot of lightly salted water to a boil; add penne and cook, stirring occasionally, until tender yet firm to the bite, about 7 minutes. Drain and rinse with cold water.
-
2
Transfer pasta to a large bowl. Stir in chicken, bell pepper, Parmesan, onion, and eggs. Pour in salad dressing and toss to coat. Cover with plastic wrap and refrigerate until chilled and flavors have blended, at least 2 hours.

A quick and easy Philly cheese steak made in the style of a Sloppy Joe. Enjoy a salad or sweet potato fries on the side. Yum!
Grammy's Overnight Lasagna
My Grammy's version of lasagna. Prepared the day before and left in the fridge overnight, it pops quickly into the oven and is on the table in no time. Sometimes I'll gussy it up with herbs and spices, but there is something nice and simple and homey about how Grammy made it. Easily halved or doubled!
